Buttery Parmesan-Romano Pasta With Chicken

Ingredients:
Penne Pasta Noodles
Chicken Breast
Zucchini
Spinach
Parmesan & Ramona Cheese (can use jar or fresh)
Butter (I use Smart Balance 50/50 Olive Oil Butter/Blend)
Garlic
Salt
Pepper

In a pot boil:

-Penne pasta noodles (whole wheat optional)
-1 tsp or 1 TBSP of smart balance butter (50/50 olive oil/butter mix)
-Bit of salt

In pan simmer (covered):
-Olive Oil
-Garlic
-Salt
-Chicken Breast (whole piece — cut into two if it’s too big)
-When chicken seemed half cooked, add some chopped zucchini.
-When mostly cooked, add a handful or more (I suggest more) of fresh spinach
-Add a small bit of pepper
-Simmer, keeping covered, until chicken, zucchini, and spinach are fully cooked.

After pasta is cooked, drain and then pour back into pot and add more 50/50 olive oil/butter (to taste) and a big heaping tablespoon of parmesan/ramono cheese.

Pour pasta into bowl/onto plate, top with chicken, zucchini, spinach. Add another TBSP of parmesan/romano cheese. Add pepper (to taste).

Done!
