Sage & Garlic Crusted Pork Tenderloin

Here’s our main dish! I opted out of traditional turkey & ham… eek, I hope I can do this later today!

Ingredients

• 2 clove(s) garlic , finely chopped (about 1 tablespoon)
• 1 tablespoon(s) finely chopped fresh sage
• 1 1/4 teaspoon(s) coarse salt
• 1/4 teaspoon(s) freshly ground pepper
• 1 tablespoon(s) olive oil
• 1 (about 1 1/4 pounds) pork tenderloin, tied with kitchen twine
• 1 tablespoon(s) vegetable oil

Directions
1. Preheat oven to 400 degrees. Stir together garlic, sage, salt, pepper, and olive oil in a small bowl. Rub mixture all over pork.
2. Heat a large, heavy saute pan over medium-high heat. Add vegetable oil. Add pork, and brown all over, about 4 minutes.
3. Transfer pan to oven. Roast pork, turning occasionally, until an instant-read thermometer inserted into thickest part registers 145 degrees to 150 degrees, about 20 minutes. Transfer pork to a cutting board; tent with foil, and let rest 10 minutes before slicing.

    Your “Love not the world” blog was so timely! I was just reading King Solomon’s (presumedly) “blog” chapter 1 of Ecclesiastes. Powerful, simple and to the point. “Knowledge of this world and things of this world are basically in vain. You can’t take it with you and you’ll probably leave your riches to some fool anyway and knowledge is in vain if not knowledge of God and the things of God”! Paraphrased……….. makes me want to give it all away…….

    I appreciate you so much and your tenacity to know more and more of God. I wish I’d been like you as a young woman! Proud of you, too!
